Food photography is difficult because magazine food stylists use tricks to make dishes look more appealing, such as searing meat for extra color or sprinkling heavy doses of garnish. Additionally, ingredients may be undercooked or omitted to make the dish appear more recognizable or less greasy. As home cooks, it can be frustrating to follow a recipe and have the final product look nothing like the photo in the magazine. Furthermore, taking good food photos requires skill and the right equipment, such as natural light, a light bounce, a tripod, and a good camera. Nighttime indoor photos, for example, will never look as good as photographs taken in daylight. Even with experience and practice, food photography can be challenging, and it's not uncommon for photos to look unappetizing or unrecognizable, as evident from the authors' early attempts at food photography.

Why is it that most photographers will shoot just about anything except food? What makes someone say yes to an assignment to shoot Chihuahuas dancing in a basketball factory, but turn down an assignment to shoot food for a local restaurant? Perhaps you’re like me, where there was an early and traumatic episode when you tried to shoot food and failed. Or maybe you have heard the screams of fellow photographers who have attempted to capture food.
