After four years of serving a full, multi-course vegan menu, Daniel Humm announced that Eleven Madison Park will no longer be a fully vegan restaurant. He said that it became clear that while they had built something meaningful, they had also unintentionally kept people out. Starting October 14th, they will integrate their new language into a menu that embraces choice, offering a plant-based menu, of course, but also select animal products for certain dishes. Humm told the New York Times that it’s hard to get 30 people for a corporate dinner to come to a plant-based restaurant. The all-or-nothing approach was necessary to develop their expertise, Humm now says, but that also comes with its own limitations.
