The ‘nose to tail’ approach is a food philosophy that aims to use all parts of an animal. A similar approach can also be used with fruits and vegetables, sometimes known as ‘root to fruit’, whereby all parts of a crop that are edible in one form or another are used. ‘Nose to tail’ or ‘root to fruit’ cooking is about more than just wasting less, though. It is also about enhancing the flavour and texture of our food. Out of respect for the environment as well as the people involved in producing food and the animals, if we choose to eat animal products, we should try to use up as much of it as we can.

Nose-to-tail eating is an approach to consuming meat that sees us enjoy as much of the animal as possible—organ meats, fat, unpopular and uncommon cuts. Nose to tail celebrates everything the animal gave up in order to provide us with food and the resources that went into its production. Nose-to-tail eating helps reduce waste, shows respect for the animal and the farmer. It’s a more sustainable and ethical way of farming, shopping and consuming. Eating the same cut of meat each week narrows our enjoyment of food. So many delicious things can be made from less popular cuts of meat. Eating the same few cuts stifles our creativity in the kitchen and keeps our experience of food small. If you need inspiration, look to traditional recipes from cultures across the globe that utilise cheaper cuts and organ meats.

Nose to tail means practically from head to tail and means that not only the classic noble cuts have to end up on the plate. It is about the holistic processing of animals such as heifers, pigs, chicken and Co. Because this is where delicacies are hidden that have now almost completely fallen into oblivion. Because properly prepared, almost all parts of the animal are edible. With an intense flavour of their own and many hitherto completely unknown aromas, they cause absolute enthusiasm among gourmets. It's not only the noble cuts that have an ingenious flavour of their own, and offal also provides plenty of nutrients.
