One downside of sous vide cooking is that it might take an hour to cook a steak. That said, a steak can stay in the bath for several hours and still come out perfectly medium-rare. The solution is to sear it afterward. A skin-on chicken breast or thigh will need to be crisped up in the same way. Keep in mind when planning your meal that foods with different target temperatures can't be cooked together. You can use a pot, of course, even though it's the circulator and not the stove that provides the heat.

I think most sous vide cookbooks, etc. are also intended for non-novice cooks. Sous vide is mainly a technique for improving quality, not speeding up already fast dishes. But it'd be a very late dinner after getting home from work. And honestly, it's fiddly. At least with reasonably priced equipment. But if you get it right, it makes an amazing steak.
