You can use sturdy resealable freezer bags, like Ziploc ones made with low-density polyethylene. However, you shouldn’t use a single Ziploc bag when cooking in water temperatures above 158°F because the heat can cause the bag to open at the seams and expose your food to the water. Double-bagging with two Ziploc bags will avoid this, or using FoodSaver bags.

There are risks for cooking sous vide, but I don't consider using zip lock bags high on the list of what those risks are. Ziplock and Glad brand bags are made from polyethylene plastic, and are free of BPAs and dioxins. A good rule of thumb is that when a bag is rated as microwave safe you can use it for sous vide. Even Dr. Schaffner agrees. Look for bags made from high-density or low-density polyethylene and/or polypropylene. They can't be boiled, but are food safe up to about 195F.

No need to splurge on a vacuum sealer -- cheaper Ziploc bags and water work just fine. I'm known to go the cheap route whenever possible, so while learning to cook sous vide I used Ziploc bags instead of vacuum sealed bags. Most zipper bags are safe to use for cooking in water baths. Thankfully, that's what Ziploc bags and most other zippered bags are made of. High-density polyethylene, low-density polyethylene and polypropylene are the safest plastics to cook with. Polyethylene plastic, which is typically used to make these bags, will start to soften at about 195 degrees Fahrenheit. Most sous vide cooking temperatures are below 190 degrees F, so you shouldn't need to worry about melting.

Yes, you can use Ziploc bags for sous vide. Getting all the air out of Ziploc bags is easy. You just place your food in the bag, including any liquids or marinades, and seal all but one corner of the bag. You can see how all the air is forced out of the pouch. Then seal the rest of the bag. The biggest advantage is the ability to seal liquids. Ziploc bags work with both solids and liquids, so you can easily use marinades and sauces while you cook. Another thing I really like about using Ziploc bags is that they are easy to open and re-seal. I almost always use the gallon size Ziplocs, I find the extra room at the top makes them easier to seal.
